Yes. This batch of Oscietra was tinned on 23 October 2026 and carries a use-by of 23 February 2027. Every tin is unpasteurised and has never been frozen. It rests in our Sydney cold room at 0 to 4 degrees. With ★ Refrigerated Courier it travels in refrigerated trucks all the way to your door, and same-day and Express Delivery orders leave in isothermal packaging with ice packs and never sit over a weekend.

30 g and 50 g each serve one. 100 g serves two. The new 250 g tin serves three to four and the 500 g eight to ten, for a Melbourne Cup lunch or a long table. Any two tins take 15% off in the cart with PAIR15.

Sydney metro: same-day by 5pm for orders before 12pm, Monday to Friday. Refrigerated Courier: order by Monday 3pm AEST, dispatched Tuesday in refrigerated trucks, delivered by Friday. Everywhere else: Express Delivery next business day for orders before 11am AEST, Monday to Wednesday. Street addresses only, no PO Boxes or Parcel Lockers. Unopened, keep it at the back of your fridge, between minus 2 and 2 degrees, until the date on the tin. Once opened, eat it within 24 hours.

Yes. Our Oscietra is Acipenser gueldenstaedtii, the Russian sturgeon, from CITES-registered aquaculture farms. The species and the CITES code are printed on the back of every tin.

Our sturgeon are raised in sustainable aquaculture farms, primarily in China, and every batch is CITES certified. The tins are graded, labelled and dispatched from our cold room in Banksmeadow, Sydney.

Yes. Add the address of the person receiving it at checkout and leave a note in the cart. Every order travels in a thermal box with ice packs and live tracking, so you will know the moment it lands.

Arrives perfect or it is free. A FreshTag rides in every order and tracks the temperature all the way to your door. Green or yellow means it arrived perfect. If yours shows orange or red, or anything else is not right, send a photo with your order number within 24 hours to bump@khaviyar.com.au or 0430 083 914 and we replace your order free. Caviar is perishable, so we cannot accept returns once it is delivered, which is why we only ship where it arrives in our cold chain or by the next business day. Please be home for delivery, or have someone ready to put it in the fridge.
