The Kaluga Hybrid, from $149.95, delivers firm pearls with a mellow, gently nutty character that pairs beautifully with a dry sparkling from the Yarra or Mornington. Allow 12–15g per person: 30g serves two, 50g serves three to four, 100g serves seven to eight.
