The Royal-Grade Kaluga — large, glossy pearls with a smooth buttery flavour — is a natural partner for a méthode traditionnelle from the Adelaide Hills. The mellower Kaluga Hybrid, from $149.95, with its gentle nutty finish, stands up beautifully to an aged Eden Valley Riesling. Allow 12–15g per person: 30g serves two, 50g serves three to four, 100g looks after seven to eight.
