What to order
Royal-Grade Kaluga carries large glossy pearls above 3.2mm with a smooth, buttery flavour — served simply over ice, it needs nothing else. The Kaluga Hybrid, from $149.95, is mellow and gently nutty, ideal alongside cold oysters and a crisp white on a warm evening. A 30g tin serves two, 50g three to four, and 100g a table of seven to eight.
